Carrot Cake

2 c sugar
1 1/2 c oil
4 eggs
1 t vanilla
2 c flour
2 t baking powder
1 t baking soda
1 1/2 t cinnamon
1 c walnuts (optional)
3 c shredded carrots

Cream sugar and oil. Add eggs and vanilla. Sift together dry ingredients. Add to sugar mixture. Add carrots and walnuts. Bake at 350 for 40-60 min in greased 9x13 pan.

FROSTING
8 oz cream cheese
4 c powdered sugar
1/4 c butter
1 t vanilla
4 T milk
